Cool Info, but I found in the hard boiled egg recipe that

peeling under cool water is not as good as:
Having a bowl of ice cubes and water ready. After 10 minutes in the boiling water, put the eggs into the bowl of ice water, and let sit until cool, then peel under cool water, and I never have to fight the egg to peel it.

 
I bring to boil, remove from heat, cover, and let sit for 10 minutes before the cold water.

perfect everytime. Oh, and as the water begins to heat, gently stir slowly with wooden spoon for about 5 min. if you want the yolk 'centered' (for making deviled eggs. That way, you don't have the thin edge that always tears.

Yes, I know, I need to get a life.... *sigh*

 
Me too. Sitting here on a Saturday night reading about egg yolks! lol Really, only 10

minutes? I do the same as you do - turn the heat off after it comes to a full boil - and then I let them sit in the hot water for 15 minutes on the burner, pan covered with its lid. Never overcooked that way, but maybe I only need 10?

 
Me, too. I've been thinking about this all day and wondering if I'm the only one who thinks the

yolks pictured are under done. I'm too old to change, I'll keep cooking mine a bit longer.

 
My 10-min. trick works perfectly, but if yours is working, no reason to change!

You just don't want that ugly green ring around the yolk, is all. I guess I should've said, I use "large" eggs.

 
Yes, eggs in cold water, turn on heat, and when it begins to steam, just move them around gently

with your wooden spoon - you just want to keep them moving so the heaviest part (the yolk) stays more or less centered.
