Chicken Cutlets with Herbed Mushroom Sauce is what was for dinner last night. Good recipe!

You and I are so alike for sure. I posted this recipe for Veal

Escalope's in Mushroom Sauce a long time ago and it is almost the same. A German friend in Saudi had a dinner party once and she served this and I loved it. We couldn't get pork in Saudi so we used veal in pork recipes. When I returned to the states I just started using pork. She also served Goat Cheese Mashed Potatoes and it was a perfect fit. The link has the mashed potato recipe also and you might want to try it sometime. It's delicious.

These look wonderful. What did you serve with them? I will wait til it cools off here

and make a batch. I love chicken and mushrooms.

I kept it simple, some nice slender greenbeans with butter and garlic, baked Yukon Gold potatoes

with sour cream and chives plus a red leaf lettuce and spinach salad with cherry tomatoes and avocado.

Oh my, the potatoes especially look wonderful! I was thinking of you a couple of days ago when

leafing through the new Food Network magazine. Please post if you make anything from it. They sure come up with some good looking recipes.

So funny that you subbed veal for pork in Saudi Arabia, and here, pork is often subbed for veal because of price and/or availability. The last time I cooked veal cutlets I must have overcooked them because they were tough. I have better luck with pork.

Have you already recieved the new FN magazine? The one with

meatballs on the cover? I'm in my second year of getting the magazine but most of the time I get it even after it's on the shelf at the store. Any mags I've gotten before I always had them before they were on the store shelf. And only 2 times has it come wrapped in plastic. I'm wondering if it is being read by the P.O. deliverer? Does yours come wrapped?

Yes, that's the one. No, it doesn't come wrapped. DH subscribes to The Economist and it's supposed

to arrive on Saturday. He's lucky if he gets it the next Tuesday. I think he'll drop it because of that. The USPS isn't the most efficient organization. Sometimes Amazon sends packages by USPS and we get the notification it's been delivered to our local Post Office at least two days before we actually receive it.

Well, I look forward to getting it as I always do. I alway get at

least 1 really good recipe every month. I really like this magazine.
