Chicken Enchiladas - Tonight I made this with lots of tweaks. Delicious!

What were your tweaks?

I've got 8 smoked chicken breasts in the freezer. I would make my own enchilada sauce.

 
I had a lot of tweaks, and they're sloppily handwritten all over the printed recipe. I have to

decipher them, then type them out, and add them to the saved recipe before I can post them here. When I do so, I'll post it, but right now it's impossible!

They're not major tweaks, so I'm sure the recipe will be great as is. Most of the reviews are excellent.

 
Do you have the recipe for the Mexican Spice Blend, I don't see it on the site. Recipe looks good!

 
I was going to ask the same thing. It always chips me off when

a recipe calls for that kind of thing. What is a Mexican Spice Blend?!

 
I looked it up online, and saw several recipes, which were basically a mixture of

chili powder, paprika or smoked paprika, cumin powder, garlic powder, onion powder, chipotle pepper, oregano, and salt. So, I just winged it, and also did several other tweaks. Overall, the instructions suck, but I made it my own, and it turned out great.
