Chicken Mole & rice for dinner

Such a nice change for cold weather & so easy. Yeah, we're not talking from scratch, but some of the jarred ones are still pretty good. Just add a bunch of broth. I whacked a smallish chicken in quarters & simmered them in it for a couple of hours. Threw the chicken back & trimmings in a saucepan with some water while it was cooking, then used the broth to make my rice. Mmm good. After the chicken is gone there will probably be enough sauce left to freeze to make a pan of mole enchiladas later.
