This was last night's "clean out the fridge pizza".
I mixed up a whole wheat herb crust (whole wheat flour, fresh Italian herbs, yeast, salt, water).
Toppings layered in this order:
-Leftover chicken parmigiana chunky red sauce
-1 chicken parmigiana breast, sliced thinly
-Pepperoni (aging opened package from the holidays)
-Sliced Shittake mushrooms (dried and reconstituted, the soaking water went into the crust.)
-Minced garlic
-Fresh herbs: basil, rosemary, thyme
-Drizzle of olive oil
-Cheeses: leftover bits of mozzarella, asiago, parmigiano, and cheddar
I prebake my crust because I don't have a pizza oven and they never get done with how much topping I stack on top. Works much better for me. I baked the loaded baked crust on the top rack of a 450F oven until it was blistering hot and the cheese was just starting to brown.
This was heavenly. Even though it was a "clean out the fridge leftovers" pizza, I will plan for the leftovers to be around next time I want to make pizza.
