Chicken Salad Bearnaise....

I just made this to take to a pot luck. I used 2 cans of chicken from Costco. I quite like their canned chicken when you are pressed for time. It is like one served at Neomonde, a Mideastern deli/grocery/restaurant here in Raleigh. From an old cookbook called "Pita, the Great" by Virginia Habeeb

1/2 C yellow raisins

2 1/2 C cooked, diced chicken

2-3 scallions finely chopped

1 C diced celery

1/2 C toasted slivered almonds, roughly chopped

1/2 C mayonnaise

1 T dry white wine

1/4 C chopped parsley

1 t chopped fresh tarragon or 1/2 t dried (or more to taste)

S&P to taste

Combine raisins,chicken, celery, scallions and almonds in a large bowl. Whisk together mayonnaise, wine, parsley, tarragon, s&p in a small bowl.Fold dressing into chicken mixture. Correct seasonings, cover and refrigerate to chill. Best made a little ahead but OK at the last minute too.

* the recipe says to line pitas with lettuce leaves, fill with chicken salad and top with sliced olives. I have never done this.

 
Tarragon is a spice (herb?) that always surprises me, as in..."oh, this is really good! What's in

it?"

"Oh. Tarragon? Really?"

Gets me. Every. Time.

 
There is a reason that Whole Foods' Tarragon Chicken Salad has been one of their most

popular items for years. It is really good. Too bad it is also ridiculously expensive.

who usually will not touch tarragon loves it!
The depth of flavor in it is amazing; subtle and very pleasing.

 
Tarragon is a favorite of mine too.

So a dear friend gave me a tarragon plant that I have not managed to kill yet, or to use. I tasted one of the leaves and it had almost no taste at all. Is this because I haven't actually cooked it or does fresh tarragon just not taste like dried?
