Chicken Saute with Mango Sauce

Hmm, I wonder how this would be with papya instead of the mango?

'Found them at the market this weekend for $1 a piece. A steal, I though - they are huge. I should be as healthy as an ox with all the colorful, locally grown fruits and vegetables I'm eating this summer!

 
It should be okay, although there won't as much sweetness - You may need a little more brown sugar.

 
when I lived in Kuala Lumpur, we would use papaya as a substitute for tomatoes in sauces -- tomatoes

were really expensive and the papaya was cheap. As a mango sub I would think you'd have to add lemon or lime juice to brighten up the sauce.
