Chicken Thighs in Savory Mustard Sauce

Preheat oven to 450º F.

1.5 pounds of boneless, skinless chicken thighs
Salt & pepper

Blend
1/2 cup of dijon mustard
1/4 cup of maple syrup
1 tablespoon of rice vinegar or rice wine vinegar

Coat salted thighs with sauce.
Pour sauce over them, turning the thighs in the mixture so they are fully coated.
Bake in a foil-lined (or disposable) oven-proof, 8×8 inch baking dish for 40 minutes or until a meat thermometer reads 165ºF (check with meat thermometer)
Baste the tops of the chicken half way through. Remove at 165 degrees.
Let the chicken rest for 5 minutes before serving.
Plate chicken, whisk sauce and spoon over top.
Sprinkle with fresh rosemary
