Chilling cookie dough

So I have a recipe for gingersnaps that I would like to try. You make the dough, roll it into cylinders, which you then chill for 2 hours, then cut into slices and bake.

What happens if I skip the chilling step? I don't really want to wait that long to bake them--with a 3-month old baby, I have a narrow window of opportunity for baking. smileys/smile.gif

I think the dough will be stiff enough to roll into balls, put onto baking sheets and flatten with a glass.

 
that should be fine. test one. if it spreads too much, put the balls in the freezer for about

a half hour.
