Chocolate Breakfast Muffins from King Arthur Flour-Just made these for the upteenth time.

I'm thinking of making these for my son's next yearbook session. Question: it calls for...

..."chocolate chips". Do you like semi-sweet or milk chocolate chips?

I use Ghirardelli semi-sweet. Also, as I noted inside, I bake them for less time than indicated -

the baking time listed is definitely too long!

 
I consider them in-between, but closer to a cupcake - I eat them as dessert. - My husband

likes them without the chips inside, and with semi-sweet icing, so the icing technically would make it a cupcake no? I prefer them without the icing, and with the chips inside. Regardless, it still tastes a little closer to a cupcake to me.

Ya know, this debate of muffin vs. cupcake has been going on forever, and as far as I know, the old fashioned muffins were denser than a cupcake, but today they all cross over.

 
Hmmmm...all of my previous cupcakes recipes are heretofore renamed "breakfast muffins" smileys/smile.gif

 
When we first arrived in the USA...

DH's company put us in a lovely hotel in San Francisco where we could order a continental breakfast in our room, and eat on a little verandah. I ordered a blueberry muffin because I had read so much about them, and never seen one. I took one bite, turned to DH with big eyes, and said, "But this is cake!".

Wow, such a long time ago now.

 
Yup, my thoughts exactly - muffins are just cupcakes without frosting...actually some ARE frosted!

 
What else do you make from the King Arthur site?

I've been poking around looking at recipes, but haven't tried anything yet. Suggestions?

 
I've tried their Fudge Brownies, which used to be called On the Fence Brownies,and didn't like them-

They weren't deep chocolatey enough, and had a weird, spongy texture after freezing and defrosting.

 
there is a lovely oatmeal bread. some other stuff too---I'll have to poke around. the blog is nice

for ideas too. comments there are helpful.
