CI Fried Rice (for Dawn NYS)

CI Fried Rice (makes 8 cups)

1/4 C Oyster sauce

1 TBL soy sauce

3.5 TBL peanut or veggie oil

2 eggs, beaten

1 C frozen baby peas, thawed

2 garlic cloves, minced

6 C cold cooked rice

1 C bean sprouts (mung bean)

5 green onions, sliced (about 1/2 C)

10-12” flat-bottomed non-stick skillet

Heat pan 2 minutes on medium heat

Add 1/2 TBL of oil

Cook eggs for 1 minute, slide off to another plate and chop up slightly

Increase to high heat for 2 minutes, add the rest of the oil and cook peas and garlic for 30 seconds.

Add rice and sauces and cook for 3 minutes.

Add eggs, sprouts and scallions and cook for 1 minute.

Fried Rice with Shrimp, Pork and Peas

Same as above PLUS

8 oz small raw shrimp

1/2 oz (6) dried shitake mushroom, rehydrate in 1 C hot water 15 minutes. Trim stems and cut into slices

2 Chinese sausages or 8 oz smoked ham in 1/2" cubes

4 oz Chinese roast pork in 1/2" chunks

NOTE: 5 C cold rice

After cooking eggs and removing them, cook shrimp for 30 seconds. Remove off to plate with eggs

Add meat with peas.

 
Just a quick observation that I noticed yesterday... the woman at

the Chinese restaurant that I ordered take-out from last night went over the refrigerator and took out a cold container of opened fried rice and put it on the grill to cook. I never noticed that before - cold AND dried - just like you said!

Must be the dried rice takes on the flavors and fats once it's reheated and ingredients are added to it. Thanks again.
