Cilantro marinated steak? I posted it ages ago and I can't find it?

Does this ring a bell with anyone? It was coated in cilantro and scallions maybe? and then sat for a few days and grilled - all my books are still in storage and I can't remember where it came from...

If anyone remembers it...

 
I remember the cookbook now - Cucina Fresca, Viana LaPlace...

It's an oldi form 1985, but has great recs - does anyone have the book??

I tried a few searches also Cheezz, and you're right, NADA!

 
Just searched inside the book at Amazon but didn't see anything

like you describe. Could it be another book, Sandra?

Here's one that dot posted at the old swap. It's all I could find.

rec:cilantro-garlic sirloin with zesty corn
ssalsa

INGREDIENTS:


1 cup (1 bunch) fresh cilantro, packed
2 garlic cloves
3 tablespoons fresh lime juice
1 tablespoon grated lime rind
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 to 1/2 teaspoon ground red pepper
2 pounds top sirloin steak (1 1/4 inches
thick)
Zesty Corn Salsa (recipe follows)
Garnish: fresh cilantro sprig


INSTRUCTIONS:


Process first 7 ingredients in a food
processor or blender until blended, and rub
cilantro mixture over sirloin steak. Chill 2
hours.

Grill, covered with grill lid, over medium-
high heat (350° to 400°) 10 to 12 minutes on
each side or to desired degree of doneness.
Let stand 10 minutes.

Cut steak diagonally across the grain into
thin strips. Serve with Zesty Corn Salsa;
garnish, if desired.



YIELD: Makes 8 servings
PREPARATION TIME: 15 min.
COOKING TIME: Chill: 2 hrs., Grill: 24 min.,
Stand: 10 min.


rec:zesty corn salsa


INGREDIENTS:


6 ears fresh corn, shucked
1/4 cup fresh lime juice
2 teaspoons olive oil
1/2 teaspoon grated lime rind
1 small jalapeño pepper, minced
1/4 teaspoon salt
1/4 teaspoon ground cumin


INSTRUCTIONS:


Grill corn, covered with grill lid, over
medium-high heat (350° to 400°) 10 minutes
on each side or until browned on all sides.
Remove from grill; cool.

Cut corn from cob into a bowl; stir in juice
and remaining ingredients.

Note: You can serve this recipe with
Cilantro-Garlic Sirloin With Zesty Corn
Salsa.

YIELD: Makes 2 cups (about 8 servings)
PREPARATION TIME: 15 min.
COOKING TIME: Grill: 20 min.

Here's a recipe for Margarita Steaks with cilantro you posted at the old board.

This recipe is designed for the BBQ, but I make them in a pan on the stove or under the broiler: Margarita Steaks < cup tequila 2 Tbsp. Sugar 1 Tbsp chopped fresh cilantro 1 tsp. lime peel = tsp. salt 2 Tbsp. Lime juice 2 jalapeno chiles, chopped & seeded 2 (12oz.) filet mignon In a glass baking dish, combine all ingredients except steaks; mix well. Place steaks in mixture, turning to coat both sides. Cover and refrigerate for at least 4 hours to marinate, turning steaks once. When ready, remove steaks from the marinade and grill, brushing occasionally with remaining marinade. Or pan fry, or broil.

 
Not the rec you were looking for,but you may enjoy Rec:Steak marinated in Mojo served with Churrasco

This rec: has similar ingredients that you were looking for; We really enjoy it. It is from 3 guys from Miami. I add scallions to the marinade and the churasco. I marinade 24 hours prior to grilling and serve with churrasco and rice with beans. Enjoy! Barb


Beef skirt steak cut in long steaks (about 3/4 pound per person or more)

Cuban Churrasco (Mojo) Marinade

3 heads garlic -- about 30 to 40 cloves
2 teaspoons salt
1 teaspoon black peppercorns
1 and 1/2 cups sour orange juice
(If you can't get sour orange juice in your area, use two parts orange to one part lemon and one part lime)
1 cup minced onion
2 teaspoons oregano
1 cup Spanish olive oil

Use a mortar and pestle and make a paste of the garlic and salt, add all to the food processor and make marinade.

Cuban Chimichurri Sauce

1 large bunch of cilantro leaves
8 cloves garlic
1/4 cup vinegar
Juice of one lime
2/3 cup olive oil
1/2 cup onion
Dash or two of red pepper flakes
Salt and Pepper to taste

Throw it all in a food processor until medium texture.

 
Here's the Grilled Flank Steak recipe from Cucina Fresca....

Grilled flank steak from Cucina Fresca

1 cup red wine
1/4 cup soy sauce
4 garlic cloves, crushed
coarse salt and pepper

Marinate flank steak for minmum 2 hours. Grill on hot grill for 4 minutes a side. Let rest for 5 minutes. Cut into thin slices across the grain. This is great at room temp. so a great dish for buffets, pot lucks or picnics.

For steaks that don't need tenderising (rib eyes are my favoruite) a simple rub of coarse salt and cumin is outstanding.
