CITRUS LEMON SLICES
325 degree oven - baking sheet ungreased
½ cup butter, softened
1 cup sugar
1 egg
Grated lemon zest of 1 orange, lemon or lime (I use lemon)
1 ¾ cup flour
2 teaspoons baking powder
¼ teaspoon salt
milk
¾ cup sliced almonds
FROSTING;
1 cup icing sugar
4 – 5 teaspoons orange, lemon or lime juice (again I’ve used lemon)
1. Cookie: Cream butter, sugar, egg and zest in a large bowl on medium speed until light and creamy. Combine flour, baking powder and salt. Add to creamed mixture on low speed, mixing just until smooth. Divide dough into four pieces. Shape each into a roll 12 inches long (I don’t think mine got that long). Place two rolls four inches apart on a baking sheet. Flatten to 2 ½ inches wide. Brush with milk. Sprinkle almonds on top, pressing in lightly. Bake 12 – 15 minutes until edges are lightly browned. Cool completely. Repeat with other two logs.
2. Frosting: Mix sugar and enough juice to make a smooth drizzling consistency. Drizzle over strips. Let set. Cut on diagonal into ½ inch slices.
Freezing: Excellent
