Cod with Coconut, Lime and Lemongrass Curry Sauce

Another use for cod. Only 5 pounds to go. I had all the ingredients so didn't sub anything. This is like a Tom Ka Gai with fish.

I found there to be too much liquid but the flavour was ideal for cod and I will definitely do this again. Next time I would use less chick broth, even though I already omitted 1/2 cup of the suggested amount.

I certainly didn't use the half pound of butter but just steamed the bok choy. I used baby-baby Shanghai bok choy and added a short shot of hoisin sauce after steaming.

Very good dinner.
