We were at the beach last week at Litchfield (Pawley's Island) and there was a collards cookoff in Murrell's Inlet. It was a hoot--AND delicious. Turns out collards are the state leafy vegetable of South Carolina.
It started at 10 with the competitors slicing their greens. At 3 there were the tastings ($5). DH and went up to see the beginning. Lots of dicing hog jowl, cooking bacon slabs down in iron pots with onions, etc. The best to us was the one cooked in an iron pot with the bacon and onions --and not cooked nearly as long as some others (which were mush). it was apparent to us that a tad of sugar was really good, and balanced with some vinegar--as well as the flavors of the pork and bacon additions.
Probably tasted12 different ways to cook them greens. LOL
