Fruit Salsa with Cinnamon Chips
Cinnamon Crisps
1 pkg 10" flour tortillas (I like whole wheat)
1/2 cup granulated sugar mixed with 1 Tbs. cinnamon
butter flavored cooking spray or other lubricant
Preheat oven to 350 degrees F (175 degrees C).
Coat both sides of each flour tortilla with butter flavored cooking spray. Sprinkle one side of tortillas with desired amount of cinnamon sugar. Spray again with cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortillas. Allow to cool approximately 15 minutes
Salsa Glaze
1 cup orange juice
1/4 cup lemon juice
3 Tbs. cornstarch
Dash of salt
1 cup sugar
Mix together all ingredients of glaze. Cook over medium heat until mixture boils and thickens. Cool and spoon over fruit.
Fruit:
Cut fruit into approx. 1/4 to 1/2” dice; mix with enough of glaze to coat. Fresh fruit is best but frozen will work. e.g. strawberries, raspberries, blueberries, bananas, pineapple (canned, ok), kiwi, mango, sweet cherries, etc.
Maybe I should have said 2 recipes--I don't think dicing fruit and mixing it with glaze counts as a recipe. But I cannot edit the subject.
