Company with Food Allergies... menu planning help needed

Hi all!

I've got company coming in next week. Just got a call today about a food allergy. Apparently my MIL has been diagnosed with a yeast allergy. So obviously no bread. There are a few other things she said she was to avoid... pasta - but cous-cous is ok?, some fruits and I know she has problems with tomatoes.

SO out went my breakfast casserole dish. Any make ahead breakfast ideas?

Also no lasagna or manicotti either.

We're going to do BBQ from a local place one night.

Then grilled salmon with broccoli and cous-cous another.

Any other t&t ideas would be greatly appreciated!

You might ask your MIL to bring a few recipes of foods she has tried and loves

so you can have them available for future visits. If they are staying more than three nights, take her to the market one morning and plan a meal around what she wants to eat. She can help you shop for the foods she can consume.....you will gain a better understanding of her problem and make lots of points!!!

 
How about a baked frittata? You can do everything in advance, keep chilled, then bake

right before serving.

 
You can do bread that doesn't contain yeast. How about buttermilk biscuits?

You can make a big pot of soup... chicken soup, beef barley stew.... and serve some nice homemade buttermilk biscuits with it. A little side salad of tossed greens, sliced oranges, toasted walnuts, and a raspberry vinegarette. Or a quinoa pilaf side dish.

Is it white flour she has to avoid? Is that the reason for no pasta?

 
What a great idea! I'd also ask her for a comprehensive list...after accommodating MOST

of the allergies, you don't want to find out there were more...and she STILL can't eat what you made. (If that sounds like the voice of experience...trust me...it is! smileys/smile.gif )

 
it sounds like there is also an issue with starches/carbs and sugar?

if so, cous cous is not an option. yellow and red veggies are high in sugar so you'd be better off sticking with greens. keep it simple with meat/fish/poultry and careful with the sauces.

is she dealing with systemic candida albicans?
