Confusion about baking soda in pancakes >> batter left to sit overnight

We had fabulous sweet potato pancakes for breakfast at Tupelo Honey Cafe in Asheville a few weeks ago. I've attached the recipe (also look at the FIRST review...a reader posted the THC cookbook version and it's ever so slightly different).

The thing that confuses the dickens out of me is the reaction between the baking soda and the buttermilk. I thought that would be immediate. So what will be left if it sits overnight? The recipe says you can do this.

I know the baking powder will rise with the heat of the pancake. But will I get anything out of the baking soda/buttermilk reaction the following day?

I've got the Garnet yams baked. Just waiting to hear if anyone has any comments on this.

Mar, those raisin bran muffins that you can keep the batter refrigerated six weeks

Are baking soda & buttermilk & they rise just fine.

 
I've also wondered about that, but I know that when I left the baking soda out of my bran muffins

they didn't rise, so somehow it does work.

 
Thanks Melissa and Lana...I tried the recipe and left it sit for an hour. They were a bust.

Puffed up nicely while baking on the griddle, but deflated as soon as they were plated. The ones at the restaurant stayed a good 1/2" thick and was nicely toothsome.

Ah well, the hunt for the perfect pancake that I can make continues.
