Creamed Brussels Sprouts

From Forklore: Tales from an American Bistro

4 Tablespoons sweet butter

2 teaspoons minced garlic

2 10-ounce cartons Brussels sprouts, coarsely shredded

1 teaspoon salt

1/4 teaspoon nutmeg

1/4 teaspoon freshly ground black pepper

1/3 cup heavy cream

In a heavy saute pan, melt butter over medium-high heat. Saute garlic for 30 seconds. Add Brussels sprouts and salt. Cook 3-5 minutes, stirring frequently. Add nutmeg, pepper, and cream. Stir well. Cook 2 minutes longer. Serve immediately.

Serve as an accompaniment to grilled chicken, pork or other meat.
