cookie suggestion please, I am drawing a blank.....

someone gave me a hugh bag of chocolate mint. I need to bring dessert to a friend's on Sat evening. I am planning on making ice cream with the chocolate mint and serve it with Marilyn's famous chocolate sauce. I want a cookie to serve with it too, but what kind? Just a plain butter cookie?

 
I don't think you can err no matter which you pick, although I would go for a very crisp and...

thin cookie.

The Butter Cookies would pair wonderfully. You could even divide the dough and do different flavors and even make pinwheels, checkerboards, or other patterns with the contrasting doughs.

Classic Toll House would pair wonderfully.

Sugar cookies as well and you could make nice cutout themed shapes.

Tuiles would pair very well. Pistachio Tuiles? Hmmm.

 
These are really good. My sis and I made these one yr for christmas. Very light and crispy.

I was looking for one other light cookie that we made. It was a similar texture; very delicate, but could be viewed as rustic if they break. I know the rec came from Gails... Looked like a really thin cookie / stained glass yellow / brown window. Ring any bells?

at tuiles, I have never been successful but it has been a long time since I have tried. I want to make them bowl shaped and serve the ice cream in them, top with Marilyn's sauce and a mint leaf. If the tuiles just won't happen then I think the homemade Oreos with the ice cream filling will be the way to go!

Barb, the trick with these are to gird your loins and wear heat-proof gloves. Grab

the cookie within 30 seconds...like making ice cream cones, the soft baked dough will stiffen very quickly. Have bowls or small cups or a large rolling pin ready for draping.
