Corn Puppies
1/2 cup +2 Tbs. flour
6 Tbs. corn meal (3/8 cup)
1/2 Tbs. baking powder
1/4 tsp. salt
1 Tbs. sugar
2 Tbs. egg substitute (or 1 egg yolk)
1/2 cup milk
2 Tbs. oil (or melted butter)
1 pound little smokies
corn starch for dusting the sausages before battering. (sorry, I didn't measure.)
oil for deep frying
toothpicks for serving
Heat the oil to 365 degrees F.
Whisk together the flour, corn meal, baking powder, salt, and sugar. In another container, mix together the egg, milk and oil. Add the wet ingredients to the dry and stir to mix.
Roll the lilttle smokies in the corn starch. Tap off excess. Dip the smokies into the batter. Fry about 1/4 of the batch at a time. When browned on all sides remove from oil and place on paper towels.
Insert toothpick in each to serve. Offer mustards and BBQ sauce for use on the corn puppies.
This coating is crisp when cooked.
