Cornbread Casserole rec. What can I substitute for the 1 cup of oil in this recipe?

Hi Guys,

Potluck tommorow, found this recipe on the internet and thought it sounded fun and easy. But I'm a little thrown by the 1 cup of oil. Seems a bit excessive. (recipe below)

Anyone make this type of recipe? Maybe it's just one of those decadent once a year type recipes. Thoughts? I might just go for it, otherwise I'll have to go out and buy a pint of sour cream. I googled the recipe and it looks like thats the common sub.

I guess what I really want is for one of you to say go ahead it'll work out fine. :>

Cornbread casserole

2 cans cream style corn

4 eggs, beaten

1 box corn muffin mix

1 c. cooking oil

1 tsp. minced onion

1 (4 oz.) jar pimento, chopped

1 c. grated cheese

Mix all ingredients together. Place in casserole and bake in 350 degree oven for 45 minutes.

This is my favorite potluck dish. It is even more flavorful if refrigerated the day before. When dinner is over the dish is empty and that makes me happy.

 
Wow, that seems like a lot of oil. I'd try maybe 1/2 cup (no subst, just less). And maybe...

increase creamed corn to 2 1/2 cans?

 
I would do just like Dawn suggested. Or use 1 cup sour cream.

1 cup of fat is 1 cup of fat I guess, but somehow using the sour cream doesn't sound as "oily",(no other way of wording that, haha). More cholesterol though with the sour cream.

 
Actually, full-fat sour cream is only 21% fat and 71% water, so this would be similar to Dawn's

suggestion. It does seem like you'd need to increase the liquid if you decreased the oil.

Oh Well I went for it, 1 cup of oil, however I spaced out and forgot the shredded cheese. I hate it when I do that. I've made a Thai Cabbage Slaw, Creamed Chicken with Mushrooms and my Bread Pudding today. I guess I had to many pots on the stove.

I ended up cooking it for closer to an hour and it looks really good. I won't cut in until the party, but I have high hopes.

FOr future reference, here is a similar recipe that calls for 1 stick of butter instead

Cheesy Corn Bake

1 lg. can cream-style corn
1 box Jiffy corn bread mix (8 1/2 oz.)
1 stick butter or margarine
1 c. sour cream
2 eggs, beaten
1 c. shredded cheddar cheese

Mix all ingredients except cheese in large bowl. Pour mixture into prepared pan or caserole dish(buttered). Bake at 375F., 30 minutes. Remove from oven and sprinkle cheese on top. Bake 10 minutes longer.

Serves 8-10

This was a huge hit at my potluck, even the friend from Alabama loved it ...

and that's high praise - I'm a yankee.
