Could someone please post or link the strawberry sorbet recipe

from the old Joy of Cooking cookbook. It was either strawberry or raspberry sorbet. Thanks!

 
This is from my Joy published in 1964 - Not sorbet but sherbet

Raspberry or Strawberry Sherbert

Soak 2 tsp. gelatin in 1/4 cup cold water
Press through a sieve or ricer - 1 qt. fresh berries
Add to them:
1/4 cup lemon juice
Boil for 10 minutes:
1 3/4 cups water
3/4 cup sugar

Dissolve the gelatin in the hot syrup. Cool and add berries. Chill. Beat until stiff but not dry and add 2 egg whites.

Still freeze.

 
My JOC is from 1951. It doesn't contain the word *Sorbet* but has several

recipes for Strawberry or Raspberry ICES, which she says can be make in an ice cream crank or ice cube tray.

Almost the same as Roz; strawberry, sugar, water, lemon juice...some contain gelatin. In my book, the sherbets contain egg whites.

Let me know if this is a path you want to see.
