This is my sons favorite, since he asked me to make it for his tenth birthday and this year was his 21rst birthday.

I used brandy to sub for the sherry and was fine. Don't try to find crimini any more, they are all labeled "baby 'bellas." Same thing, I know.

OH MY!!

Does this reheat well? I've be on a weekly soup making odyessy this year . . . a pot of soup on the weekend for weekday lunches. I have to be careful of soups made for "day-of" versus soups that will reheat endlessly for a couple of days. I would love this.

We've never had leftovers, but I'd guess that it does not keep well.
