Craftsy class with Peter Reinhart on bread making for $19.95

He used to make a hamburger bun which had wild rice and I think onion

I bought it in the health food section of our Raley's. The nice big buns were only 80 calories and were excellent, plus they held up well. I tracked down the recipe and asked a few local bread bakeries to make them for me and they would not because of having to process the wild rice. You bread bakers should look up that recipe...because it is truly awesome. I may just look it up again and ask Great Harvest Bread company to make them for me....I asked them once to do some special bread for me to make Muffalatta, and they did it.

Is there something "hard" about it that you couldn't do it? I took a class from him

at Johnson and Wales and he is SO good. And his mantra is that anyone can learn to bake bread.

I've asked several bakeries here to make it for me and they would not tackle it, stating the wild

rice as an extra step, a complicated recipe that would take some practice to perfect, etc. I used to make breads in a bread machine and had so much stuff that took up a lot of room in my pantry. Now, I don't want to get back into it. We have a great European Pastry shop here now, which sells excellent breads. They are new, and a bit overwhelmed by the response from the community. I hesitate to ask them at this time if they would make it for me.
