I used this for an appetizer along with whole grain crackers and it was the first the disappear.
Cranberry Goat Cheese Spread
Adapted from Bon Appetit March 2001
Nice for breakfast on bagels or toast.
Yield: Makes about 1 cup
ingredients
Nonstick vegetable oil spray
1/4 cup dried cranberries
6 oz nonfat spreadable cream cheese, room temperature
6 oz soft fresh goat cheese (such as Montrachet)
2 to 3 teaspoons honey (may be leftout)
preparation
Spray metal blade of processor with nonstick spray. Add dried cranberries to processor and coarsely chop. Add nonfat cream cheese, goat cheese and 2 teaspoons honey; process until well blended. Taste and add 1 teaspoon honey, if desired. Transfer spread to bowl. (Can be prepared 3 days ahead. Cover and refrigerate.)
Decorate top of spread with more dried cranberries.
