Does anyone else know what that is? Being half-Welsh, it's kind of a family joke how St. Patrick gets all the attention in March when St. David's Day is the "big" holiday in the month. ;o)
4 medium-sized leeks, sliced and thoroughly washed
1 onion, skinned and sliced
3 medium-sized potatoes, peeled and sliced
2 Tbsp butter
4 cups vegetable stock
salt and pepper
3 Tbsp cream (or maybe yogurt this year!)
Saute vegetables in butter for about 5 minutes, until soft. Add stock and cover; simmer for about 45 minutes or until the vegetables are cooked.
When cooled comfortably, puree soup and return it to the pan. Re-heat, re-season if necessary, and stir in cream just before serving.
