CREAMY TOMATO MINT SAUCE (1.5 quarts)
2 med onions, finely chopped
2 cloves garlic, minced
3 Tb oil
Cook until limp.
Add 1 large (28 oz) and 1 small (14 oz) cans Roma tomatoes
1 1/2 Tb dry mint, 1 1/2 tsp dry basil
1 cup regular strength chicken broth
Break up tomatoes w/ spoon. Simmer uncovered 20 minutes-reduce to 6 cups. Stir in 1/2 cup whipping cream. Add salt and pepper.
I use this on homemade cannelloni
