Creme Brulee Cheesecake Recipe - This is awesome!!!

I served this with raspberry sauce, a white chocolate sauce and a spoonful of whipped cream on the side. Beautiful and very very good!!! I'm not sure where I got this recipe.

Vanilla Bean Creme Brulee Cheesecake

Ingredients

1 9 inch cheese cake crust -- as desired

2 vanilla beans

1/2 cup cream

5 8 ounce packages cream cheese -- softened

1 1/2 cups sugar

4 eggs

1 teaspoon vanilla

3 -4 tbls sugar (approx)

Directions

1. Prepare a nine in spring form pan with the crust of your choice. The recipe on the box of graham cracker crumbs works just fine.

2. Preheat oven to 350 degrees.

3. Put cream in a small sauce pan. Split vanilla beans and scrape out seeds with the point of a small knife. Put seeds and beans in cream, and bringto a simmer over medium heat. Turn off heat and cool to tepid.

4. Meanwhile, beat cream cheese with sugar until well blended and no longer grainy. Add eggs one at a time, incorporating egg after each addtion. Remove beans from cream and add cream and vanilla seeds to cream cheese mixture. Add vanilla. Mix until batter is uniform.

5. Pour batter into spring form pan and bake in center of preheated ovenfor about 50 minutes. The center of the cheesecake should still be wobbly.Remove cheesecake from oven and cool on a rack for 10 minutes, then run asmall knife around rim to loosen. Continue to cool to room

temperature, then refrigerate until thoroughly chilled.

6. Before serving, evenly sprinkle a layer of sugar over top of cheesecake. Using a small kitchen blow torch, work the flame over the sugar in smallcircles until sugar melts and turns golden. If you do not have a blow torch,put cake under a hot broiler, but watch it carefully and rotate as needed,to melt the sugar without "cooking" the cheesecake. Wait until sugar hascooled and set, then garnish as desired and serve.

Notes:

1. To make it easier to remove cheesecake from base of springformpan, line the bottom of the pan with parchment paper.

2. Some people swear by baking cheesecakes in a bain marie (hot water bath). To do this, wrap heavy duty aluminum foil around spring form pan before putting anything in it. When ready to bake cheesecake, put a roasting pan, or other shallow pan large enough to hold cake pan, in oven. Put the wrapped cheesecake cake pan in the larger pan and then pour boiling water into larger pan so that the water comes halfway up the side of the cake pan. Add more water if level in pan becomes too low during baking.
