Cucumber, pineapple salad from "Mighty Spice." Refreshing, but it needs....something?

Found a copy online. I chickened out and tempered the onions in hot water/cider vinegar/sugar rather than using his method to remove the bitiness. Then I added a fresh TBL of vinegar and some turbinado sugar back in afterward.

Also, because I live where I live, the closest I could get to a red chili was a green jalapeno pepper...which isn't even a chili. So sad. That may have added a note of bitterness to the mix.

However weird this combo was, we still enjoyed it. I just think it can be better.

Mango and Fresh Cilantro. Some ginger wouldn't hurt either smileys/smile.gif and maybe a splash of sesame oil?

and some water chestnuts for a little more crunch?

And suddenly cashews appeared in my head...

 
I have all of those. AND a tumeric root! Bought it "just because" I could. Haven't a clue what

to do with it.

Isn't that sad. No red chilies...but the store had tumeric root. Someone must have requested that.
