Cuisine’s Oatmeal Raisin Cookies

Makes 36 cookies

Whisk together and set aside

2 c all-purpose flour

1 t baking soda

1 t baking powder

1 t kosher salt

Cream wet ingredients

1 c unsalted butter, softened

1 c sugar

1 c dark brown sugar, firmly packed

2 large eggs

2 t vanilla

Then stir in

3 c oats (not instant)

1 1/2 c raisins

Preheat oven to 350°

Whisk dry ingredients; set aside.

Combine wet ingredients with a hand mixer on low.

To cream, increase speed to high and beat until fluffy and the color lightens.

Stir the flour mixture into the creamed mixture until no flour is visible.

(Over mixing develops the gluten, making a tough cookie.) Now add the oats and raisins; stir to incorporate.

Fill cookie scoop with dough.

(Use a #40 cookie scoop; it measures 2 Tbsp of dough) Press against side of bowl, pulling up to level dough.

Drop 2” apart onto baking sheet sprayed with nonstick spray.

Bake 11-13 minutes (on center rack), until golden, but still moist beneath cracks on top.

Remove from oven; let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.

I just made Mayor Michael Bloomberg's favorite oatmeal raisin cookie

I added walnuts and they weren't as thick as I hoped, so I folded a moist cookie in half and I believe these may be the closest to Panera Bread's thick- Nutty Oatmeal Raisin Cookies

Gracie Mansion’s Oatmeal Raisin Cookies

½ cup (1 stick) unsalted butter, room temp.
1 cup packed dark-brown sugar
¼ tsp salt
1 large egg
1 tsp pure vanilla extract
¼ cup water
¾ cup all-purpose flour
2 cups quick-cooking oatmeal (not instant)
1 tsp ground cinnamon
¼ tsp baking powder
¼ tsp baking soda
¼ tsp freshly ground nutmeg, didn’t use
½ cup raisins

Preheat oven to 350°. Line two baking sheets with parchment paper; set aside.
In a large bowl, using a spatula, cream together butter, sugar and salt. Add egg, vanilla, and ¼ cup water; mix until well combined.
In another large bowl, mix together flour, oatmeal, cinnamon, baking powder, baking soda, and nutmeg. Fold into the butter mixture until well combined. Add raisins and stir until well combined.
Using a 1 ½” ice cream scoop, scoop out cookie dough onto prepared baking sheets, about 1 ½” apart. Transfer baking sheets to oven and bake until edges begin to brown, about 20 minutes. Let cookies cool on baking sheet for about 10 minutes before transferring to a wire rack to cool completely.
