Mom's Hot Fudge Sauce is very similar to a recipe we have made for 30-some years - and ours can be made in the microwave or on the stove!

Dave's Hot Fudge Ice Cream Sauce

1 stick of butter

3 cubes unsweetened chocolate (either Schafggen Berger, Callebaut, Guirardelli, Valrhona Cacao Pate Extra or Nestles are recommended by America's Test Kitchen)

1 cup granulated sugar

1 small 5 fl. oz. can evaporated milk

1. Place chocolate and butter in a small microwavable bowl (we have a small glass mixing bowl we've designated for hot fudge) and place into the microwave at 50% power for 2 1/2 minutes.

2. Stir until butter and chocolate are melted and smooth.

3. Add sugar in a slow stream, stirring to mix in - will be grainy.

4. Add the evaporated milk also in a thin stream stirring constantly to incorporate until the milk is mixed in.

5. Return the bowl to the microwave and cook for 2 1/2 minutes at 50%. Stir and then cook for an additional 2 to 2 1/2 minutes on 50% power until thickened. Stir again until smooth.

NOTE: The very hot, just cooked sauce will be thinner at the end of cooking than once it has cooled. Wait 1/2 hour or so for the sauce to cool down enough to top ice cream or place the bowl in an ice bath to cool for immediate use.

Like Mom's Hot Fudge Sauce, Dave's is thick and fudgie when cold - great to top brownies or right out of the fridge on a spoon! I'm sure ours will keep for a week in the fridge like Mom's but it has never lasted long enough to see!

Without trying Mom's, I think I like Dave's better because it is a smaller amount - less dangerous for big chocoholics like hubby and I! Colleen

Question? I'm looking for a fudge that will work in ice cream, like the Denali fudge in MooseTracks ice cream. Do you think this one fits the bill?

Actually, I'm looking for the perfect fudge topping that will accomplish two goals: first, it will slide off the spoon mere millimeters from my mouth and splatter onto my shirt, avoiding possible addiction while forcing me to finally wash clothes.

I've never made ice cream with it but I think that it might be hard when frozen. I have eaten it over the top of Moose Tracks ice cream - to die for!

As for the impetus to wash clothes, the fudge pretty much hugs the spoon until safely ensconced in the mouth! Colleen

 
Sounds delicious! Is this the kind that lifts? There was an article in a

McCall's magazine several years ago, about the different kinds of chocolate sauces. I think it was Julia Child who made several different sauces and explained the methods. Or perhaps it was her recipe that came out on top. Wish I'd save the entire article, I just kept some of the recipes.

 
Looking through my recipes reminded me, sauce that hardens and lifts has a bit of corn syrup in it.
