Curious, I made your Mediterranean White Bean Soup with Sausage and Kale last night

Glad you liked it, it's become my go to. Dh likes it with chorizo instead of Ital. sausage and as

you found out, it's great to play with. It's even better when left over.

 
I'm also thinking it would be a good use for chard and chard stems.

The stems could replace the celery and the greens could replace the kale.

 
That's basically the recipe I started with & it's become a go to and adapts easily

I have used all kinds of greens - kale, tatsoi, chard, even mustard, collard and turnip greens. DD HATES greens but LOVES this soup no matter what greens I use. I also vary the sausage by what I have on hand - my original recipe used Kielbasa but I have used Italian, chorizo, and other local sausages.

One other thing I do to kick it up and cut back on the meat but increase the nutritional density is to add grains - quinoa, barley or farro. And it just always seems to work no matter what I do or have on hand.

 
Soup was very nice! He used chicken sausage and added one potato. Lar's on low salt

so the broth was low sodium.

Served it with whole-grain grilled cheese sandwiches made with Irish cheddar, country dijon mustard and the outsides coated with a light schmear of Vegennaise.
