I think that's a great idea, but I want to make the dumplings. I have collards and turnip greens,

am still searching for the mustard. Just because...

 
I'd make them too, at least the first time. It would be a quick

shortcut for anyone who wasn't wild about the dumplings the first time.

 
I made another batch Saturday night and used canned mexican hominy. It was good...

...but it turned it into a different dish. The hominy gave it a more corny flavor, which we like.

My wife suggested I keep the recipe with a note at the bottom about adding hominy. Both versions were equally good in their own right, according to DW.
