OK, I have been trying to plan a non-stress dinner to have for a couple and I think this is it.

I have made Dawn's enchiladas and they are wonderful. I know the rice will be great. The black bean salsa sounds good too, but how do I use it? Is it used to put over the rice, enchiladas? Usually, I use salsa for chips or tacos, but don't want to serve chips and salsa for this dinner because it would fill us older folks up before dinner is served. LOL
