Cut/Prep Onions a day ahead?

I'm putting together a Hanukkah party for our neighbors and local friends since we are the only Jews in our small town and they don't know much about it and they want to. I need to make 60+ latkes and wondering if I can cut/grate the onion today. The rest just gets thrown together (we use Simply Potatoes Hash Browns - this recipe has been the best we've ever had).

I'm setting up tables to play Dreidels and I have/modern Hanukkah music to play (the kids will love it - set to 'pop' music).

Lots to do (Hubby had shoulder surgery last week - he'll be of no help:() so if I could do the onions today that would be huge!

I often chop or slice onions a day or two ahead. I can't imagine why grated onions

wouldn't work well too--as long as they are refrigerated.

I love latkes! Happy Hanukkah.

 
pre prep onions

i have quite often done this with diced onions and stored over night in plastic or glass bowls well sealed with plastic wrap,
its warm here {aus} so usually pop in fridge over night,
i dont see why grated wouldnt hold the same.

would you mind posting your latke recipe
love eating them but not always patient enough to scratch make

 
I keep chopped onions for up to a week in my fridge. I use glass storage containers

with tight lids. They keep very well.

• 1 Package Simply Potatoes
• 2 Eggs
• 1 small / medium yellow or white onion (grated or finely chopped)
• 1/3 cup flour
• ½ tbs. salt
• Black pepper to taste
• ½ tsp. Baking Powder
• Canola oil

Mix ingredients (other than oil) together in a bowl using a large spoon. Let sit five minutes for juice from onions to saturate mixture and re-mix.

Preheat canola oil in electric frying pan at 375 degrees. Oil is ready when drop of water sizzles. Drop latkes by serving spoon into fry pan. After they set a couple minutes, press down to flatten. Flip when underside is golden brown. When both sides are brown, remove with spatula onto platter lined with paper towel. Layer latkes between paper towels to absorb grease.

Serve hot with applesauce and/or sour cream. Makes 8-10 latkes

 
Mmm Latkes. I was just reading at the library a mag (sorry can't recall), parsnip latkes and sweet

sweet pot latke's. What an interesting twist!

 
mmm just a query " Simply Potatoes

im assuming simply potatoes is a form of dried (flaked) potatoes
instant potatoe ??
and thanks that looks so simple ill grab ingds today

In the refrigerated section of the grocery store - usually near the eggs.

 
I love onions, they don't love me...

I'm speaking raw. I learned an amazing trick from a Mexican friend who I sous cheffed for: Cut the onion, put them in water. The water draws out the bitter and they're like candy. You can cut the onions and put them in water and they'll be fabulous.

 
I do this, but start with 2 cups of very hot water and a TBL of cider vinegar.

Allow to sit for at least 10 minutes.
