I make batches of basil pesto each fall and put all the ingredients in, including the butter and cheese. it's so much easier when I go to use it and I don't find that the texture alters enough to leave it out.
I freeze it in small Ziplocks but can just take out whatever amount I need.
I cook the pasta, green beans and baby potatoes all in one pot (finding that the beans are not taking a whole lot longer than the potatoes these days), drain and then just add the pesto directly to the pot. One pot, so easy. Old H's favourite pasta.
And for me, it works as a leftover.
