All the fruit floated to the top, did that happen to you too? Trader Joe's makes a darn good Fig Butter, I'd love to get my hands on that recipe.

Trader Joe's Fig Butter. It starts with a medley of fresh, ripe figs: Mission figs for their extreme sweetness, Calimyrna figs for their distinctive nutty flavor and Conadria figs for their nutty-sweet balance. The whole figs are dried, ground and then crushed before being slow-cooked, in small batches, with sugar, lemon and pectin. It’s a simple recipe using only the finest, freshest ingredients, and no preservatives or artificial colors. The result is full fig flavor concentrated in a smooth, spreadable butter. It’s delicious on toast or waffles, pairs gracefully with cheeses and mixes flavorfully into yogurt or oatmeal. At $2.29 for an 11 ounce jar, even the price of our Fig Butter is smooth.



 
...and here's a crockpot "fig butter" version. Good luck.

Crockpot Fig Butter

6 cups figs with stems removed
3 / 4 cup sweet white wine
3 /4 cup honey
1 / 2 T lemon juice
2 t vanilla
1 t cinnamon

Add everything to a 2 quart crockpot and cook on high for 2 hours. Using a large spoon or potato masher, mash figs until all whole figs are broken down.

Crack the lid to let the steam escape and turn crockpot down to low and continue to cook for 6 – 8 hours.

Fill hot jars with butter and hot water bath them for 10 minutes

Sometimes recipes tell you to turn the jars upside down for a while....

right after they come out of the canner. I think this might help some.

 
Huh! Never had that problem but I do flip the jars. I also let

the jam cool for about 5 minutes before pouring into jars.

Do you like the flavor? Try it on a cracker with a nice Stilton. Delicious! I've also made fig newton's with it.

 
Flipping the jars did not help. About the

flavor, I wasn't sure I'd like the flavors of cinnamon and nutmeg in the jam so I cut those measurements in half. I was right, I don't like the cinnamon nutmeg flavor in it. I can live with this for now, but the next time I will omit those spices.

 
thanks for this! I make apple butter using this method---leaving the lid ajar. works really well.
