these are excellent - not too sweet, a bit of an exotic flavor

if you want to skip dessert, these would be lovely served for your guests after dinner with a cup of coffee or tea

DATE TRUFFLES

3 cups dates, pitted and roughly chopped

12-ounce cup of strongly brewed coffee, regular or decaffeinated is fine (or 6 oz coffee + 6 oz brandy)

· 1 cup pecans, chopped finely in a mini - food processor

· 1/2 cup shredded coconut, sweetened or unsweetened

· zest of 1 orange (optional 1 tablespoon orange liquor)

Optional: 2-3 tablespoons of unsweetened cocoa powder, ½ teaspoon cinamon

Soak dates for 10 minutes in coffee (+/- brandy). Drain the dates but do not squeeze out liquid. Discard the coffee.

Transfer dates to a regular food processor, add the rest of the ingredients and pulse until mixed.

Shape into 1-inch balls.

To coat, roll in the following to coat:

Yu can use:

Shredded coconut

Cocoa powder

Ground almonds or other nut

Melt 12 ounces semi-sweet chocolate in a double boiler and roll truffles.

Refrigerate at least 30 min.

Keeps well for many days in an airtight container in cold.

 
Half Sunsweet, half Medjool - but either type will work great

I was just trying to finish an open package of Medjool I had, got about 1.5 cups out of it, completed with Sunsweet, California grown
