I have been making a spinach lasagna that has summer squash in it, and I use the won ton wrappers or egg roll wrapper in it. I found the original recipe in Southern Living, and have figured out the Weight Watcher Points Plus for it. It is much lower in calories and fat then regular lasagna. I bake it in an 8x8 baking pan, and it makes four large servings at 8 WWPP.

REC: Won Ton Spinach Lasagna

Here is the original recipe. I use fat-free cottage cheese instead of the ricotta cheese. I use 1 large egg instead of the egg substitute. I leave out the carrots (bleh), I only add the cottage cheese, egg, spinach and herbs together. I bring the sauce to a boil, and then add 1 zucchini and 1 crookneck squash that has been cubed to the sauce and turn it off. Then I assemble the lasagna as directed below.

Won Ton Spinach Lasagna

2 Cups Shredded Part-skim Mozzarella Cheese (8 ounces) divided
1 1/2 Teaspoons Dried Basil, divided
3/4 Teaspoon Ground Red Pepper, divided
1 Container Fat-free Ricotta Cheese (15 ounce)
1 Package Frozen Chopped Spinach (10 ounce) thawed, drained well
1 Cup Shredded Carrots
1/2 Cup Shredded Parmesan Cheese
1/4 Cup Egg Substitute
1/2 Teaspoon Garlic Powder
1 Jar Pasta Sauce (26 ounce)
Vegetable cooking spray
1/4 Package Won Ton Wrappers (16-ounce)


STIR together 1 cup mozzarella cheese, 1 teaspoon basil, ¼ teaspoon pepper, ricotta, and next 5 ingredients in a large bowl.
STIR together sauce and remaining ¼ teaspoon each of basil and red pepper. Spread ¼ cup basil sauce mixture over bottom of a 13- x 9-inch baking dish coated with cooking spray.
ARRANGE 1 layer of won ton wrappers over sauce, slightly overlapping wrappers. Top with one-third cheese mixture. Spoon one-third remaining basil sauce over cheese mixture. Repeat layers twice, ending with basil sauce. Sprinkle with remaining 1 cup mozzarella cheese.
BAKE at 350° for 45 minutes or until bubbly and cheese melts. Let stand 10 minutes before serving.
