Thanks Curious! I just love those enchiladas and I have used the same

chicken filling and mixed with cooked pasta and that was delicious. I also thinned it our a bit and added some pinto beans to make a soup with it. All good. lol.

I can see both uses, using it with pasta especially appeals to me.
