Chicken pot pies turned out wonderful. Recipe was mostly from 30 day Gourmet. I first slow roasted a whole chicken, cut up the white meat only which gave me 6cups of chicken and these are the amounts that I used from their recipe.
1 1/2 cup chopped onions
1 1/2 cup chopped celery
1 1/2 cup chopped carrots
1/2 cup butter melted
3/4 cup flour
3 cups chicken broth
1/1/2 cup evaporated milk
6 cups cooked chopped chicken
1 1/2 cup frozen petite peas thawed
1 tsp. salt (recipe would have been 2 1/4 tsp)
3/8 tsp. pepper
piecrust.
Saute onions, celery, carrots in butter till tender. Add flour and stir till smooth. Cook one minute stirring constantly. Add chicken broth and evaporated milk. Cook, stirring constantly until thickened and bubbly. Stir in chicken, peas, salt and pepper. They then cooled and froze in freezer bags.
I followed a different recipe and used 10 pot pie foil pans. Divide filling evenly in pans, put pie crust over top, pinch around the edge so that it adheres. Put a few holes in the center with a fork, lightly dust with flour. Place each pan in a freezer bag and freeze.
Cooking: Preheat oven to 450 degrees. Place still frozen pie on a cookie sheet and bake 40-45 minutes.
For pizza, I read about several different ways to freeze. I wanted smaller pizzas, so I ended up using foil cake pans that were lightly oiled and put cornmeal on them. Assembled pizza, dough, sauce, toppings and cheese and also placed them in a freezer bag. I have tried baking one pizza before freezing; was able to remove it from cake pan and cut. The directions for a frozen one is do not thaw or preheat oven. Place pans on a cookie sheet, turn oven to 425 degrees and cook for 30 to 35 minutes, or until done.

Dough Mix:
8 cups unbleached bread flour
4 cups unbleached all purpose flour
1 cup stone ground cornmeal
1/4 cup sugar
3 tablespoons salt
3 tablespoons baking powder
Mix together
in a large bowl. Store in well sealed plastic bags for up to 4 months.
To make pizza dough:
1 cup warm water
1 1/2 teaspoon fast rise yeast
3 cups of dough mix
2 tablespoons olive oil
I put the ingredients in my bread maker, water, oil, dough mix and yeast. Turned out great, was able to use a rolling pin to get the dough pan size, was not a sticky dough.
