A local farm stand had "bruised" tomatoes for $30/lb. I used your rec; and modified for fresh tomatoes. I did not skin/deseed. It tasted fine; texture was perfect. I added some home made garlic croutons as garnish.

barb, this also freezes very well. I leave out the cream and add it as needed.

It's definitely in my KEEPER list.

 
Mar, thanks...I was thinking of freezing some for my FIL.(he is still going through dental surgery)
