I inspired someone?! lol Pretty good, especially the lighter green, "younger"
ones. I was so eager to find large ones that I overlooked a lot of the smaller, lighter green ones, and they were actually the better ones to use. Too large, and they get stringy and tough, just like most vegetables.
I heard that you should count down 2 or 3 from the new growth (tendrils) and then pick the next 2 or 3 down away from that. Then move on to the next vine. Those are the newest, yet still large enough to roll. If you have mint, you might want to stick a leaf or two in there with them - it gives them a nice flavor. I don't know if the commerical ones have mint in them, but it seemed to go well in there.
Mine were actually better than the store-bought ones, I thought. The rice was less gooey and gummy (maybe because I cooked it outside of the grape leaves, and then stuffed the leaves to finish cooking it), and the rolls were not bathed in oil.
Seems between the cabbage rolls and the grape leaves, I've been stuffing and rolling a lot! Let me know how they turn out for you.
