It was fabulous! I am ditching my family recipe and replacing it with yours. smileys/smile.gif I think poaching the chicken in broth and green chili really makes the recipe.

Also, it was the first meal I've cooked in my new house. smileys/wink.gif

While I'd LOVE to take credit for it, it's Dawn_MO's... funny, though, I was planning on making it

tonight with some leftover chicken, but I have to buy some tortillas. Did you use corn or flour tortillas?

 
Ooops! Apologies to Dawn_MO. I used flour tortillas.

And I was lazy and made stacked enchiladas instead of rolling them. We had a friend over for dinner and I was way behind and needed to save some time. I also increased the chili because we like lots of chili. (I buy the Bueno chili from New Mexico it comes in plastic tubs of hot and mild. I usually mix a hot and a mild to make a medium.)

I served it with a green salad with sliced avocadoes and mandarin oranges. Brownies for dessert.

I love the idea of stacking the tortillas, I have never thought of that. I am definitely going to try that next time. Thanks!
