DD and I are making tamales for our Christmas dinner...what would you serve with them?

You might consider frijoles, a salad heavy on tomatoes and avocado, chayote or other squash. Some

Salsas for the tamales. If not beans, how about some cilantro rice? Or both, if you don't mind the carbs. The salad could be a sort of pico de gallo with avocado, cherry tomatoes, onion and cilantro. It's all about the tamales! What is the filling? I think they are a lot of fun (and work) to make.

Wow, that salad sounds terrific. I might make it for xmas dinner side. Should go well with prime rib

We serve the ones I make as part of Christmas Eve dinner. It starts with Posole Rojo (soup)...

...and maybe Albondigas (more soup).

Those are served with a nosh spread with various salsas, chips, guacamole, dips, etc.

Then the main meal includes Red Chile Pork or Green Chile Chicken Tamales with (optional) sauce and cheese, Dawn's Creamy Chicken Enchiladas, Pinto beans and Mexican Rice. Green salads tend to get ignored with that spread, unfortunately.

I second the refried beans, or just a nice pot of frijoles de olla (not fried)

if the rest of the menu is rich.
