I'm staying at a B&B in Napa this weekend and for breakfast, this was one of the dishes. Set in a chaffing dish, it was a beautiful serve yourself option for those who like eggs in the morning. My guess is, people asked for the recipe so often, they print recipe cards in anticipation. So delicious!

Death by Cheese

Wine Country Inn

St. Helena, CA

12 eggs

1 cup flour

2 teaspoons baking powder

8 ounces cream cheese

2 pounds jack cheese, cut into cubes

1/4 teaspoons salt

2 cups milk

15 ounces cottage cheese

4 tablespoons butter

Cut cream cheese and jack cheeese into cubes, place in zip lock bag and refrigerate. This can be done the night before, beat the eggs in a large bowl. Add flour, baking powder, salt and mil. Use whip to be sure that all the flour is absorbed. Beat in cottage cheese. Sir in cubed cheese, amking sure the cream cheese cubes do not stick together. Put into a large coated baking dish. Dot the top evenly with butter. Bake at 325 for approximately 45 minutes until puffed and golden on top. Allow to cool 10 minutes before serving.

 
Holy Lipitor...that's 4 LBS of cheese/butter alone. Plus the eggs + milk. I weep

because I KNOW I will make this one day and that boooinngggg! is the sound of my arteries slamming shut. I'll bet the B&B's lawyers named this to assert deniability.

Leek and Cheese Phyllo Tart

This is like a large phyllo pizza. Cut in slices to serve. Vary the vegetables with other ones you like. To clean leeks, remove dark green leaves and discard. Slice leeks down to root and wash under warm water to dislodge any dirt, then slice.
Serves 10 to 12
2 tbsp (25 mL) olive oil
6 cups (1.5 L) sliced leeks
1 zucchini, diced
Salt and freshly ground pepper
1/2 cup (125 mL) goat cheese
1 1/2 cups (375 mL) ricotta cheese
3 tbsp (45 mL) chopped dill
2 tsp (10 mL) crushed fennel seed
3 eggs, beaten
1/3 cup (75 mL) melted butter
10 sheets phyllo

1. Preheat oven to 350°F (180°C).
2. Heat olive oil in a large skillet on medium-high heat. Add leeks and zucchini and sauté for 5 minutes or until softened. Season well.
3. Combine goat and ricotta cheese in bowl, then whisk in dill, fennel and eggs until well incorporated. Season with salt and pepper. Stir in leek and zucchini mixture.
4. Brush a 15-inch (38-cm) pizza pan with butter. Brush 1 sheet of phyllo with butter and place across pan. The sheet will overhang a little. Butter a second sheet and overlap first sheet by about 3 inches (8-cm). Continue to make a circle using about 8 to 10 sheets, buttering each sheet as you go.
5. Spoon in the filling leaving a 1-inch (2.5-cm) border. Fold the overhang on to the filling and make a free-form "crimped" edge. Butter edge.
6. Place in bottom shelf of oven and bake for 20 to 25 minutes or until pastry is golden and filling is set. Serve warm or at room temperature.

My notes: People always ask for seconds but making just half of this is enough for 4, using 1/2 the filling and about 7 sheets of phyllo. The round is about 10" across.

Handy because it can be made ahead.

My mom makes this, albeit on a smaller scale. She also tosses in white wine or green chiles. Tasty!

Can you make it ahead and reheat it, or should I just put it in once I've taken the turkey out?

 
I think this is really better at room temp or slightly warm. Hot doesn't do it

for me. So I would bake it just ahead of the turkey and serve it at room temp. Just leave it on the counter. It reheats well but you need to do it only to warm and given that your turkey might be sitting out for about 30 minutes, this would give you about 10 minutes to reheat it.

Or not.

 
Lots of different options...there was salsa for those who wanted it. Other

offerings were bagels, a waffle bar with nutella, jam and whipped butter, granola, etc.
