Deb, I made the lemon blueberry bars. How did yours turn out?

The only tweak I made was to use twice the amount of blueberries. I looked at the amount of sugar/condensed milk and felt more berries were needed to balance it out. I made the bars for the first day of board of director meetings at work and they were a big hit.

I might make them again as blueberries are still easy to find. I think next time I would make a shortbread crust and use about 1/4 of the streusel mix on top with the nuts.

I don't remember how many blueberries I used - I tend to go by eyeing it more than following the recipes (like you).

I think a shortbread crust would work very well! And a nice contrast to the creamy filling.

I tend to use frozen blueberries ALOT and they have always worked well. Reason being is that I can't always get great tasting blueberries and I've had too many pies that weren't too fabulous because of that. Since I switched to frozen (unless I know I'm dealing with great tasting blueberries) every pie has been wonderful.

That being said - there is a house about 1/2 mile away (they are more rural) that has the most delicious blueberries this - they are self pick:)
