The first time was for the teachers at school. The second time was for a meeting this morning so it was the first time I got to try it. Even the dieters were cursing me b/c they "had" to try a piece and ended up loving it too.
I covered it w/ cream cheese and toasted walnut frosting recipe from Emeril. http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_12736,00.html . Basically just dumped the frosting over and sprinkled w/ the walnuts. Totally overkill since the cake is so good and moist but liked the extra sweetness and crunch.
A side note, I've been using my mandoline for years w/ no problems until last night. Slicing the apples I got careless and turned to tell one of my kids something. Bad idea. The good news is it wasn't the kind of cut you'd expect from a slicer like that so I butterflied it even though it could've used a few stitches. Who's got that kind of time? Three kids needed to get to bed for school this morning. -Tessie
