deb-in-MI--pls reply to the ?s left at yr post #27638 re Coconut Pecan Cake. There's a frosting

wigs

Well-known member
inquiry from Melissa Dallas, and I have a couple questions regarding a couple missing cake ingredients--at least I thihk there are egg & extract omissions--I can see both of those referenced in the directions, but don't see them in the ingredient listing. TIA!

PS: I tried to find the original REC at A TASTE OF THE SOUTH magazine site, but didn't see anything resembling what you'd posted.

So funny you asked this...I just realized this past weekend about the missing egg and extract....

when I went to make it again. Where was MY brain?

Although I couldn't find the exact recipe anywhere - based on similar recipes from the magazine and on the cake I baked this weekend - this is what I think.

5 extra large eggs and 1 extra egg yolk
1 tsp. vanilla

so so sorry for the incomplete recipe

Frosting

I remember not really being thrilled with it (I bet it was a whipped cream frosting) so I dismissed it.

My cream cheese frosting is simply 1 brick of cream cheese, 1 stick of unsalted buttter, and powdered sugar and whipping cream to create a spreadable frosting. I also added about 1 Tbsp. of cream of coconut:)

Thanks, deb-in-MI! The only reason I noticed the omissions is because I was going through your REC

step by step to make sure I had everything called for. It sounds delicious!
